Detox Red Velvet Bliss Balls

I've got a delicious little bite for you, just in time for Valentine's Day!

They get their bright pigment from the nutrient powerhouse, BEETS, which are also a powerful liver cleanser. Betanin and vulgaxanthin are two compounds in beets that have been shown to provide antioxidant, anti-inflammatory, and detoxification support. They clean out the toxins that have been removed from the liver, allowing them to be flushed from the system instead of being reabsorbed by the body.

Plus, they make these bliss balls so beautiful and bright!

Not only are they super delicious and creamy (almost like a frozen cheesecake texture), they're also easy to make! This would be an awesome snack to add to your meal prep for the week. Pop them in the freezer and enjoy one any time you find yourself wanting a little something sweet!

One warning though: The batter is so tasty that it might be hard not to just eat it as-is!
I let Nate try a few bites and he couldn't get enough. He was even walking through the house with a little beet mustache! :)


You will need:

For the bliss balls
2 raw beets, peeled
1 cup raw or roasted cashews
2 tbsp hemp hearts
2 medjool dates
1 tsp vanilla extract
OPTIONAL: 2 tbsp collagen or your favourite plant-based protein powder. You can also omit this and just add 2 extra tbsp of hemp hearts instead! 

For the powder coating:
1-2 tbsp coconut flour
OPTIONAL: 1 beet (instructions below!)

instructions:

Add all ingredients for the bliss balls to your food processor. Blend until creamy.

Add mixture to a parchment-lined pan and freeze for 1-2 hours. Remove from the freezer and roll mixture into balls.

For the coating, you have two options:


Option 1 - Easy peasy:
Roll bliss balls in coconut flour then return to the freezer until you are ready to enjoy.

Option 2 - A little more advanced:
Preheat the oven to 350 degrees. Peel a beet and thinly slice into chips, either with a mandolin slicer or a sharp knife. Lay beet slices evenly spaced on a parchment lined pan and roast for 10-15 minutes until dry. Keep an eye on them so they become dried but not burned! 

Allow the beet chips to cool, then pulse in a blender or coffee grinder until a bright red powder forms. Combine the powder with the coconut flour. Roll bliss balls in the powder mixture, then return to the freezer until you are ready to enjoy.

One final tip: When you're ready to have one, remove it from the freezer and let it sit for 3-5 minutes so it softens just a bit and the texture will be like cheesecake! YUMMY!
